Choose from Peppermint, Moroccan Spearmint, Pure Lemongrass and Pure Lemon Verbena for bright, clean flavours. Greek Mountain Tea is Sideritis from Greece, with gentle sage and wildflower notes.
Flowers include Lavender Flowers, Rose Garden Petals, Chrysanthemum Tea and Butterfly Pea Flower. Earthier picks are Dandelion Root, Nettle Leaf Tea and Pure Moringa Leaf, plus Pure Rosehips for a tangy cup.
Use 1 to 2 teaspoons per 250 ml cup and water at about 96°C. Steep leaves and flowers 4 to 6 minutes. Roots like dandelion are dense, so they do well with 6 to 8 minutes or a short simmer.

Butterfly pea brews a deep blue. Add a squeeze of lemon or lime and the acid turns it purple or pink. It has a mild, earthy taste, so it pairs well with citrus and honey.
Start with one base herb, such as mint or lemongrass, then add a smaller amount of a flower or accent. Lavender and rose are strong, so a pinch per pot is usually enough.
