Herbs and spices FAQ

How do I brew single herbs?

Use 1 to 2 teaspoons per 250 ml cup and water at about 96°C. Steep leaves and flowers 4 to 6 minutes. Roots like dandelion are dense, so they do well with 6 to 8 minutes or a short simmer.

Are all of these herbs caffeine-free?

Most are. The exception is guayusa, a holly leaf from the Amazon that naturally contains caffeine, so treat Pure Guayusa like a cup of tea rather than a caffeine-free herbal.

Why does butterfly pea flower tea change colour?

Butterfly pea brews a deep blue. Add a squeeze of lemon or lime and the acid turns it purple or pink. It has a mild, earthy taste, so it pairs well with citrus and honey.

How can I make my own herbal blend?

Start with one base herb, such as mint or lemongrass, then add a smaller amount of a flower or accent. Lavender and rose are strong, so a pinch per pot is usually enough.
